- Unsalted butter – 2 tbsp (plus 1 tbsp for greasing)

- Granulated sugar (optional) – 1 tsp
- Olive oil (optional) – 1 tbsp
- Heavy cream – 2 cups
- Parmesan cheese, finely grated – 1 cup + 2 tbsp (for topping)
- Kosher salt – 1½ tsp, divided
- Black pepper – 1 tsp
- Fresh thyme leaves (or dried) – 2 tsp (or 1 tsp dried)
- Russet or Yukon Gold potatoes, thinly sliced – 3 lbs
Directions:
- Preheat Oven
Heat oven to 375°F (190°C). Grease a 9×13-inch glass casserole with butter or cooking spray. - Caramelize Onions
Melt 2 tbsp butter in a skillet over medium heat. Add onions and ½ tsp salt. Cook 20–25 minutes, stirring occasionally, until golden and sweet. Add olive oil or a splash of water if needed. Optional: sprinkle sugar to speed caramelizing. - Make the Creamy Pour-Over
In a bowl, whisk together cream, 1 cup Parmesan, remaining salt, pepper, and thyme. Stir in the warm caramelized onions. - Prepare Potatoes
