Bacon Wrapped Stuffed Chicken Breast

It all started as a simple “use what’s in the fridge” idea—chicken, cream cheese, spinach, and bacon—and quickly turned into a go-to favorite. Juicy chicken, creamy filling, and crispy bacon come together in a dish that looks impressive but is surprisingly easy to make. Perfect for weeknights, family dinners, or even special occasions.

Bacon Wrapped Stuffed Chicken Breast 🥓🍗

Ingredients

For the Chicken
4 boneless, skinless chicken breasts
8 slices bacon
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
½ teaspoon garlic powder

For the Filling
4 oz cream cheese, softened
½ cup shredded mozzarella or cheddar
1 cup fresh spinach, finely chopped
2 tablespoons bacon bits (optional)
1 teaspoon Italian seasoning
1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat Oven
    Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Make the Filling
    In a bowl, mix cream cheese, shredded cheese, spinach, bacon bits, Italian seasoning, and parsley until well combined.
  3. Prepare the Chicken
    Cut a pocket into the side of each chicken breast without slicing all the way through. Rub with olive oil, salt, pepper, paprika, and garlic powder.
  4. Stuff and Wrap
    Fill each chicken breast with the mixture. Wrap each one with 2 slices of bacon, securing with toothpicks if needed.
  5. Bake
    Place seam-side down in the baking dish. Bake uncovered for 30–35 minutes, until the chicken is cooked through (165°F / 74°C) and the bacon is crispy.
  6. Optional Finish
    Broil for 2–3 minutes for extra crispiness if desired.
  7. Rest and Serve
    Let rest for 5 minutes before serving.

Notes
Use mozzarella for a melty texture or cheddar for a sharper flavor.
Toothpicks help keep everything in place while baking.
Pairs well with mashed potatoes, roasted vegetables, or a fresh salad.
