My aunt brought this over last week, and I couldn’t believe it only requires 4 simple ingredients.

This Oven-Baked Mushroom Swiss Steak Rolls recipe is a simplified twist on a classic roulade, where the natural fats in the beef and the melted Swiss cheese help keep the meat moist from the inside as it cooks. Using thin-cut cube or round steak removes the need for long braising times, while tightly rolling the meat helps trap steam and gently tenderize it in under an hour. The rich gravy acts as a flavorful cooking base, keeping the beef from drying out while infusing it with savory mushroom notes.

Oven-Baked 4-Ingredient Mushroom Swiss Steak Rolls

Ingredients:

  • Beef round or cube steak (thin-sliced) — 1½ to 2 lbs
  • Swiss cheese — 8 to 10 slices
  • Condensed beef gravy — 2 cans (10.5 oz each)
  • Sliced mushrooms (drained) — 1 can (6–8 oz)

Step-by-Step Directions:

Step 1: Prepare the Baking Dish
Preheat the oven to 350°F. Lightly grease a 9×13-inch baking dish. Lay the beef slices flat on a clean surface. If needed, gently pound them to an even thickness for consistent cooking.

Step 2: Add the Filling
Place one slice of Swiss cheese on each piece of steak. Trim or fold the cheese if it overhangs. Add a small spoonful of drained mushrooms near one end of each slice.

Tip: Avoid overfilling—keeping the filling modest helps seal the rolls and prevents the cheese from melting out too early.

Step 3: Roll and Arrange
Roll each piece of steak tightly around the filling. Place them seam-side down in the baking dish. Arrange them close together to help them stay secure without using toothpicks.

Step 4: Add the Gravy
Stir the condensed gravy until smooth, then pour it evenly over the rolls.

Tip: If the gravy is too thick, mix in 2–3 tablespoons of water or beef broth. It should be pourable while still coating the meat well.

Step 5: Bake Covered
Cover the dish tightly with foil and bake for 45–60 minutes. The covered environment helps retain moisture, allowing the beef to become tender.

Step 6: Finish Uncovered
Remove the foil and continue baking for an additional 5–10 minutes. This step helps the gravy thicken and lightly caramelize. Let the rolls rest for about 5 minutes before serving so the cheese can set slightly inside.
