Artichoke Bakes

These 3-ingredient artichoke bakes are the kind of warm, cheesy appetizer that disappear as soon as they’re served. They’re simple to make but feel special enough for gatherings, combining tender artichoke hearts, melted cheese, and herbs baked until golden with lightly crisp edges.

Serve them straight from the oven on a platter so the melted, golden cheese stands out. They pair nicely with a fresh salad, a veggie tray, or a light soup. For parties, offer toothpicks or small forks so they’re easy to grab. Since they’re rich and satisfying, they don’t really need bread or crackers.

🌿 Low-Carb Artichoke Bakes

📝 Ingredients

  • Quartered artichoke hearts – 2 cans (14 oz each), drained and well dried
  • Mozzarella cheese – 2 cups, shredded
  • Italian seasoning – 1 tbsp

👩‍🍳 Instructions

1. Preheat the oven
Set the oven to 400°F (200°C). Lightly grease a muffin tin or line a baking sheet with parchment paper.

2. Prepare the artichokes
Drain and pat the artichokes completely dry to help them crisp up while baking.

3. Season
Toss the artichokes with the Italian seasoning until evenly coated.

4. Arrange
Place about 4–5 pieces into each muffin cup, or create small piles on the baking sheet.

5. Add cheese
Top generously with shredded mozzarella, pressing it down slightly so it sticks.

6. Bake
Bake for 15–20 minutes, until the cheese is melted, bubbly, and lightly golden. For extra browning, broil for 1–2 minutes at the end.

7. Cool and serve
Let them rest for about 5 minutes before removing. Serve warm.

Crispy, cheesy, and incredibly easy—these bites prove that great appetizers don’t need a long ingredient list, just a few good basics and a hot oven.
