🧾 Ingredients

  • 1 (16 oz) bag coleslaw mix
  • 1 (15 oz) can black beans, rinsed & drained
  • 1 (15 oz) can corn, drained
  • 1 (4 oz) can diced green chiles or jalapeños
  • 1 red bell pepper, diced
  • ⅓ cup green onion, chopped
  • 2 tbsp fresh cilantro, minced
  • 1 (10 oz) bag Fritos
  • 1 tbsp taco seasoning
  • 1–2 tsp chipotle powder
  • 1 cup mayonnaise
  • Juice of 1 lime
  • Kosher salt & black pepper, to taste

👩‍🍳 Preparation

Make the dressing:
In a large bowl, whisk together the mayonnaise, taco seasoning, chipotle powder, and lime juice. Taste and adjust seasoning if needed, adding salt and pepper.

Assemble the slaw:
Add the coleslaw mix, black beans, corn, chiles, bell pepper, green onion, and cilantro. Toss well until evenly coated.

Chill & serve:
Refrigerate until ready to serve. Right before serving, mix in the Fritos for extra crunch.
