Low Carb 3-Ingredient Pork Bites

Ingredients

  • 2 pounds pork belly, skin on (cut into 1-inch cubes)
  • 2 tsp kosher salt
  • 1 tsp black pepper

Directions

Step 1: Preheat
Preheat oven to 425°F (220°C). Place a sturdy glass baking dish in the oven while it heats.


Step 2: Prep the Pork
Pat the pork belly cubes very dry with paper towels to help the skin crisp up.


Step 3: Season
Toss the pork cubes with salt and pepper until evenly coated.


Step 4: Arrange
Carefully remove the hot baking dish from the oven. Place the pork cubes in a single layer, skin side up, leaving a bit of space between each piece.


Step 5: Roast
Bake for 25–30 minutes, until the fat starts to render and the meat begins to brown.

Increase the oven temperature to 450°F (230°C) and continue roasting for another 15–25 minutes, until the skin is crisp and golden. Rotate the dish if needed for even cooking.


Step 6: Rest and Serve
Remove from the oven and let the pork rest in the hot fat for 5–10 minutes. Serve directly from the dish or transfer to a platter, spooning a bit of the rendered fat over the top if desired.
