Glazed Coconut Loaf

- 1½ cups all-purpose flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- ¾ cup granulated sugar
- ½ cup unsalted butter, melted and cooled
- 2 large eggs (room temperature)
- ¾ cup coconut milk
- 1 teaspoon vanilla extract
- 1¼ cups sweetened shredded coconut
Glaze
- 1 cup powdered sugar
- ¼ cup coconut milk
- 1 tablespoon soft butter
- ½ teaspoon vanilla extract
Instructions
1. Prepare the pan
Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment.
2. Mix dry ingredients
In a bowl, whisk together flour, baking powder, and salt.
3. Mix wet ingredients
In a larger bowl, whisk sugar and melted butter until smooth. Add eggs one at a time, then mix in coconut milk and vanilla.
4. Combine
Stir dry ingredients into the wet mixture until just combined, then fold in the shredded coconut.
5. Bake
Pour batter into the pan and smooth the top. Bake for 45–55 minutes, until golden and a toothpick inserted comes out with a few moist crumbs.
6. Make the glaze
Whisk together powdered sugar, coconut milk, butter, and vanilla until smooth.
7. Glaze and cool
Let the loaf cool for about 15 minutes, then remove from the pan. While still slightly warm, pour the glaze over the top. Let cool completely before slicing.
