Pineapple Quick Bread

This Pineapple Quick Bread is a simple, no-fuss recipe that yields a soft and moist loaf packed with the bright, sweet flavor of crushed pineapple. With no yeast required and minimal prep time, it’s an easy way to add a tropical touch to your breakfast or afternoon snack. Each slice is tender, fragrant, and irresistibly delicious.


Ingredients

For the Bread:

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 3/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 can (8 oz) crushed pineapple, undrained
    (or 1 cup fresh crushed pineapple with juice)
  • 1/2 cup unsalted butter, melted
    (or coconut oil for added tropical flavor)

Optional Topping:

  • Turbinado sugar, for sprinkling

Instructions

Step 1: Prepare the Oven
Set your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line it with parchment paper for easier removal.

Step 2: Mix Dry Ingredients
In a medium bowl, combine the flour, baking soda, baking powder, salt, and cinnamon (if using). Whisk well and set aside.

Step 3: Mix Wet Ingredients
In a large bowl, whisk together the sugar, eggs, and vanilla extract until smooth. Add the melted butter (or coconut oil) and crushed pineapple with its juice. Stir until fully blended.

Step 4: Combine Mixtures
Gradually add the dry ingredients to the wet mixture. Stir gently until just combined—avoid overmixing, as a slightly lumpy batter helps keep the bread tender.

Step 5: Bake
Transfer the batter into the prepared loaf pan and smooth the surface. Sprinkle turbinado sugar on top if desired. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.

Let the bread cool in the pan for about 10 minutes, then move it to a wire rack to cool completely.

Step 6: Serve
Slice and enjoy as is, toast with butter, or add a simple glaze made from powdered sugar and a bit of pineapple juice for extra flavor.
