Garlic Butter Roast Beef Bites

These low-carb roast beef bites are the kind of appetizer my Aunt Mary always served at weekend gatherings—simple, flavorful, and gone almost instantly. Thin slices of deli roast beef wrapped around herbed cream cheese create a rich, savory bite that feels a little special without requiring much effort. They’re perfect for game days, movie nights, or anytime you need a quick, crowd-pleasing snack using everyday ingredients.

Serve them chilled or slightly cool on a platter, with toothpicks for easy serving if desired. They pair well with crisp vegetables like celery, cucumber, or bell pepper strips to balance the richness. For drinks, iced tea or sparkling water with lemon keeps things light, while a dry red wine is a great option for adults. If you’re hosting a crowd, add a simple green salad or a tray of cheese and nuts to round out the spread while keeping it low carb.

Roast Beef Bites

Ingredients

  • 8 oz deli roast beef, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tbsp fresh herbs (such as parsley or chives), finely chopped, plus extra for garnish

Directions

1. Prepare the filling
Let the cream cheese soften at room temperature for 10–15 minutes. Stir in the chopped herbs until smooth and well combined.

2. Assemble the rolls
Lay a slice of roast beef flat and spread a thin layer of the cream cheese mixture along one edge.

3. Roll
Roll the beef tightly into a log, placing it seam-side down. Repeat with the remaining slices.

4. Chill
Refrigerate the rolls for 20–30 minutes to help them firm up.

5. Slice
Cut into bite-sized pieces, about 1 to 1½ inches thick.

6. Serve
Arrange cut-side up on a platter and garnish with extra herbs if desired. Add toothpicks just before serving.

Easy, savory, and always a hit, these roast beef bites are a simple appetizer that delivers big flavor with minimal effort.
