Slow Cooker Apple Cider Pork Roast

Slow Cooker Apple Cider Pork Roast

Ingredients

  • 3–4 lbs boneless pork shoulder (pork butt), trimmed
  • 2 cups apple cider (unsweetened)
  • 1 large yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • ½ tsp ground cinnamon
  • Salt and black pepper, to taste
  • 1 tbsp Dijon mustard (optional)
  • 1 tbsp brown sugar (optional)

(Use a 6–7 quart slow cooker)

Step-by-Step Instructions

1. Optional Sear
Heat a little oil in a skillet over medium-high heat. Sear the pork for 3–4 minutes per side until browned.

2. Layer Ingredients
Spread the sliced onions in the bottom of the slow cooker. Place the pork on top, then add garlic, thyme, cinnamon, salt, and pepper. Pour the apple cider around the pork.

3. Cook
Cover and cook on LOW for 8–9 hours or HIGH for 5–6 hours, until the meat is tender and easy to pull apart.

4. Finish and Serve
Remove the pork and let it rest briefly. Skim excess fat from the liquid if desired. For a thicker sauce, simmer the cooking liquid on the stovetop for about 10 minutes. Slice or shred the pork and serve with the onions and sauce.
