5-Ingredient Slow Cooker Lemon Sponge Pudding
Ingredients:
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 3 large eggs, separated
- 1 cup whole milk
- 1/3 cup fresh lemon juice (plus 1 teaspoon lemon zest)
Instructions:
Step 1: Mix the Dry Ingredients
In a medium bowl, whisk together the sugar and flour until fully combined and free of lumps.
Step 2: Make the Lemon Batter
In a large bowl, whisk the egg yolks, milk, lemon juice, and lemon zest until smooth. Gradually add the sugar-flour mixture and whisk until you have a thin batter.
Step 3: Fold in the Egg Whites
In a separate bowl, beat the egg whites until soft peaks form. Gently fold them into the lemon batter in two or three additions, being careful not to overmix.
Step 4: Slow Cook
Lightly grease a 4–6 quart slow cooker and pour in the batter. Cover and cook on LOW for 2½ to 3 hours, until the top is puffed and lightly set.
Step 5: Let It Rest
Turn off the slow cooker and leave the pudding covered for about 15 minutes before serving.
Serve
Spoon into bowls and enjoy warm. The fluffy sponge on top and creamy lemon pudding underneath make every bite delicious.
