Southern 3-Ingredient Pimento Cheese

This easy pimento cheese is the one my sister always asks me to bring to spring get-togethers. It’s creamy, sharp, and a little nostalgic—perfect alongside a bowl of crackers at any picnic or casual gathering. While traditional versions have Southern roots, this simplified take uses just three everyday ingredients and still delivers that classic, comforting flavor.

Serve it in a nice bowl with crackers, celery sticks, or sliced cucumbers. It’s also great spread on soft bread for sandwiches, spooned onto toasted baguette slices, or added to burgers or grilled cheese for something more filling. I like to keep some in the fridge during spring—it’s ideal for quick snacks, easy lunches, or last-minute guests.

Southern 3-Ingredient Pimento Cheese

Ingredients

  • 8 oz sharp cheddar cheese, freshly shredded
  • 1 cup mayonnaise (start with 3/4 cup for a thicker texture)
  • 1 jar (4 oz) diced pimentos, drained

Directions

  1. Add the shredded cheddar to a medium bowl.
  2. Mix in the mayonnaise, starting with 3/4 cup and adding more if needed.
  3. Drain the pimentos well and stir them in.
  4. Mix until everything is evenly combined.
  5. Adjust the texture if needed—more mayo for creaminess, more cheese for thickness.
  6. Cover and refrigerate for at least 30 minutes to let the flavors come together.
  7. Serve chilled or slightly cool with crackers or fresh vegetables. Stir before serving if needed.
