Slow Cooker Goulash Recipe

This Crockpot Goulash is pure comfort food made easy. Slow-cooked ground beef, tender peppers, and a rich tomato sauce come together for a hearty, satisfying meal the whole family will love. Finishing it off with macaroni and sweet peas at the end keeps everything perfectly textured and full of flavor.

Slow Cooker Goulash Recipe

Ingredients:

Meat & Vegetables:

  • 2 lbs ground beef
  • 1/2 onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 cup frozen peas

Sauce Base:

  • 2 cups beef broth
  • 2 cans (14 1/2 oz each) tomato sauce
  • 2 cans (14 1/2 oz each) diced tomatoes

Pantry Items:

  • 1 box elbow macaroni, dry
  • 1 tsp minced garlic
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1 tsp black pepper

Directions:

Step 1: Brown the Beef
In a large skillet over medium heat, cook the ground beef until fully browned. Drain any extra grease before continuing.

Step 2: Cook the Vegetables
Add the diced onion and both bell peppers to the skillet. Cook for about 5 minutes until slightly softened. Stir in the garlic during the last minute of cooking.

Step 3: Combine in the Slow Cooker
Transfer the beef and vegetable mixture to a 6-quart slow cooker. Add the Italian seasoning, salt, pepper, tomato sauce, diced tomatoes, and beef broth. Stir well to combine.

Step 4: Slow Cook
Cover and cook on HIGH for about 3 1/2 hours, allowing the flavors to blend together into a rich, hearty sauce.

Step 5: Prepare the Pasta
About 1 hour before serving, cook the elbow macaroni according to the package instructions. Drain well.

Step 6: Finish the Goulash
About 30 minutes before serving, stir the cooked macaroni and frozen peas into the slow cooker. Cover and let everything warm through on LOW or WARM until ready to serve.

Tip: Adding the pasta at the end keeps it from becoming too soft while still soaking up all the delicious sauce.
