Oven Baked 4-Ingredient Chicken Lombardy

Ingredients:
• 4 small chicken breasts (about 1½ lbs), patted dry
• 8 oz fresh mushrooms, sliced
• 1 can (10.5 oz) cream of mushroom soup
• 1½ cups shredded mozzarella cheese
• Salt & black pepper, to taste

Step-by-Step Directions:

Step 1:
Heat a little butter or oil in a skillet and sauté the mushrooms for 6–8 minutes until golden and tender.

Tip: Cooking the mushrooms first removes excess moisture and gives the dish a richer flavor.

Step 2:
Preheat oven to 375°F. Season the chicken with salt and pepper, then place in a greased baking dish. Stir 2–3 tablespoons of water into the soup to loosen it slightly, then spoon over the chicken.

Step 3:
Top the chicken with the cooked mushrooms and any juices from the skillet. Cover loosely with foil and bake for 20 minutes.
