Grandma Betty’s 3-Ingredient Ice Cream – A Simple Classic Treat

Easy Homemade Freezer Ice Cream – A Frugal Family Favorite
This humble frozen dessert has been a family favorite for generations. My Grandma Betty often made it during lean times when store-bought treats weren’t always in the budget, yet she still wanted something sweet to share after dinner. With only a few pantry staples—evaporated milk, sugar, and vanilla—she could create a simple dessert that felt like a real indulgence.
She would mix everything together, pour it into a glass baking dish, and tuck it into the freezer for a few hours. By the time evening arrived, we were eagerly waiting with spoons in hand. The texture was creamy, lightly icy, and absolutely delicious. Today, it’s still a favorite in our home, and my grandchildren request a scoop whenever they visit.
Serve directly from the freezer while the ice cream is soft enough to scoop. Enjoy it plain, or top it with fruit, chocolate sauce, caramel, or your favorite preserves. It’s especially delicious alongside warm desserts such as brownies, fruit cobbler, bread pudding, or pound cake, where the cool sweetness melts into every bite.
Easy Homemade Freezer Ice Cream
Ingredients
| Ingredient | Amount | Notes |
|---|---|---|
| Evaporated milk | 1 (12-ounce) can | Chilled thoroughly |
| Granulated sugar | ½ cup | Adjust as desired |
| Vanilla extract | 2 teaspoons | Pure or imitation |
Directions
1. Chill Ingredients
Place the evaporated milk in the refrigerator for at least 4 hours, preferably overnight. For best results, chill the mixing bowl and beaters for about 30 minutes before starting.
2. Prepare the Dish
Set an 8×8-inch glass baking dish or casserole dish in the freezer while you mix the ingredients.
3. Make the Mixture
Combine the chilled evaporated milk, sugar, and vanilla in the cold bowl. Beat for 3 to 5 minutes until the mixture becomes light and slightly frothy. Taste and adjust the sweetness if desired.
4. Initial Freeze
Pour the mixture into the chilled dish. Freeze for 1½ to 2 hours, until the edges begin to firm while the center remains partially frozen.
5. Stir the Ice Crystals
Using a spoon or fork, scrape the frozen edges toward the center and stir well. Spread the mixture back into an even layer.
6. Finish Freezing
Return the dish to the freezer for another 1 to 2 hours, or until the ice cream is firm yet still easy to scoop.
7. Serve
Scoop into serving bowls and enjoy. If frozen solid, allow it to stand at room temperature for 10 to 15 minutes before serving.
8. Storage
Cover tightly and store in the freezer. For the best texture and flavor, enjoy within 3 to 4 days. The ice cream may become icier over time, which is part of its old-fashioned homemade character.
