This hearty Spring Night Bake is the kind of simple casserole that turns a handful of everyday ingredients into a comforting family meal. Directions
Step 1: Prepare the Ingredients
Preheat the oven to 375°F (190°C). Wash the potatoes well and slice them into ¼-inch rounds. Slice the leeks, using the white and light green portions only. Cut the sausage into coins or chop the chicken into bite-sized pieces.
Step 2: Build the Layers
Arrange half of the potatoes in the bottom of a 9×9-inch baking dish. Top with half of the sausage or chicken and half of the sliced leeks. Repeat the layers with the remaining ingredients. Season lightly with salt and pepper. If desired, add a pinch of dried thyme or rosemary.
Step 3: Bake Covered
Cover the dish tightly with aluminum foil and bake for 45 minutes. During this time, the potatoes will become tender while absorbing the flavors from the meat and vegetables.
Step 4: Add the Topping
Remove the foil and sprinkle the shredded cheese evenly over the top. If using butter instead, dot the surface with small pieces. Return the dish to the oven uncovered and bake for another 15–20 minutes, until the cheese is melted and lightly browned.
Step 5: Rest and Serve
