Instructions

1. Cook the Aromatics

In a medium saucepan over medium heat, melt the butter together with the olive oil.

Add the chopped onion and cook for 4–5 minutes, stirring occasionally, until softened. Add the minced garlic and cook for about 30 seconds, just until fragrant.

2. Build the Soup Base

Sprinkle the flour over the onion mixture and whisk continuously for 1 minute.

Gradually add the broth while whisking to create a smooth mixture without lumps. Allow the soup to simmer for 5–7 minutes, or until it begins to thicken slightly.

3. Add the Dairy

Stir in the heavy cream and whole milk.

Lower the heat and let the soup simmer gently for about 5 minutes, stirring occasionally.

4. Incorporate the Lemon

Remove the pot from direct heat.

Slowly stir in the fresh lemon juice and lemon zest. Taste the soup and adjust the seasonings as needed.

Helpful Tip: Adding the lemon after cooking helps preserve its bright flavor and reduces the risk of the dairy separating.

5. Blend for a Smooth Finish (Optional)

For an ultra-silky texture, blend the soup using an immersion blender.

Alternatively, carefully transfer the soup to a blender and puree in batches before returning it to the pot.

6. Serve

Ladle the bisque into serving bowls and garnish with chopped parsley and additional lemon zest, if desired.

Serve warm and enjoy its creamy texture and refreshing citrus flavor.
