Ingredients:

The Layers

  • Refrigerated buttermilk biscuits — 1 (16.3 oz) can
  • Breakfast sausage (mild or spicy) — 1 lb
  • Large eggs — 8
  • Whole milk (for gravy) — 3 cups
  • Whole milk or half-and-half (for eggs) — 1 cup
  • All-purpose flour — 1/3 cup

Seasonings & Toppings

  • Garlic powder — 1/2 tsp
  • Onion powder — 1/2 tsp
  • Dried thyme — 1/2 tsp
  • Black pepper — 3/4 tsp (divided)
  • Salt — 1 tsp (divided)
  • Unsalted butter (melted) — 2 tbsp
  • Optional: cheddar cheese, cayenne, chives

How to Make Biscuits and Gravy Breakfast Casserole:

Step 1: Sausage Gravy Base
In a large skillet over medium heat, cook the sausage until browned (about 5–7 minutes). Leave about 2 tablespoons of drippings in the pan. Sprinkle in the flour and stir for 2 minutes. Gradually whisk in the warm milk, then add garlic powder, onion powder, thyme, salt, and pepper. Simmer for 3–5 minutes until thickened.

Step 2: Assemble the Casserole
Preheat oven to 375°F and grease a 9×13-inch baking dish. Arrange the biscuits in a single layer on the bottom, cutting them if needed to fit. Pour the warm gravy evenly over the biscuits.

Step 3: Add the Egg Layer
Whisk together the eggs, 1 cup of milk, salt, pepper, and a pinch of cayenne until smooth. Gently pour the mixture over the gravy layer.

Tip: Do not stir the layers—allow them to remain separate so the textures stay distinct as they bake.

Step 4: Bake and Set
Bake for 35–45 minutes, until the eggs are set in the center and the biscuits are golden brown. Let the casserole rest for about 10 minutes before serving to allow it to firm up.

Step 5: Finishing Touch
Brush the top with melted butter and sprinkle with fresh chives before serving.
