Cafeteria Fudge Squares

These nostalgic Lunch Lady Brownies bring back memories of school cafeteria treats—rich, fudgy, and perfectly moist, topped with a smooth cocoa frosting that gently melts into the warm brownies.

Ingredients

For the Brownies:

  • 1/2 cup butter, melted
  • 1 cup granulated sugar
  • 2 eggs
  • 3 teaspoons vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder

For the Frosting:

  • 2 tablespoons butter, softened
  • 3 tablespoons milk
  • 2 tablespoons unsweetened cocoa powder
  • 1 1/2 cups powdered sugar

Instructions

Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with foil, leaving an overhang to lift the brownies out easily later.

Step 2: Make the Brownie Batter
In a mixing bowl, combine 1 cup sugar with 1/2 cup melted butter. Stir until the mixture lightens slightly in color and texture.

Step 3: Add Eggs and Vanilla
Mix in the 2 eggs and 3 teaspoons vanilla extract until fully incorporated.

Step 4: Combine Dry Ingredients
Gradually add 3/4 cup flour and 1/4 cup cocoa powder, mixing just until evenly combined. Avoid overmixing.

Step 5: Bake the Brownies
Pour the batter into the prepared pan and bake for 20–25 minutes, or until a knife inserted in the center comes out mostly clean with a few moist crumbs.

Step 6: Make the Frosting
While the brownies cool, combine 2 tablespoons softened butter, 3 tablespoons milk, 2 tablespoons cocoa powder, and 1 1/2 cups powdered sugar in a medium bowl. Mix until smooth, adjusting with more milk or powdered sugar as needed for the right consistency.

Step 7: Frost the Brownies
Spread the frosting over the warm brownies so it melts slightly into the surface.

Step 8: Serve and Enjoy
Use the foil to lift the brownies from the pan. Cut into squares and enjoy this classic treat!
