These Slow Cooker Foil-Wrapped Potato Packets make an excellent side dish thanks to the “steam-in-packet” technique, which locks in flavor and moisture. Each baby potato absorbs the melted butter and herbs as it cooks. Because they’re sealed in foil, the potatoes stay tender without drying out or becoming mushy. Serving them in individual foil packets adds a rustic, fun touch and keeps them hot right up until serving time.

5-Ingredient Slow Cooker Foil-Wrapped Potato Packets

Main Ingredients

  • 1 1/2 lbs baby potatoes (Yukon Gold or red)
  • 4 tablespoons unsalted butter, cut into small pieces

Seasoning

  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon dried seasoning blend (Italian, garlic-herb, etc.)

Directions

Step 1: Prepare and Season
Wash and thoroughly dry the baby potatoes. Place them in a large bowl and toss with the salt, black pepper, and seasoning blend, making sure each potato is evenly coated for consistent flavor.

Step 2: Add the Butter
Sprinkle the butter pieces over the seasoned potatoes and toss again. This ensures the butter is evenly distributed so it can melt and coat the potatoes during cooking.

Step 3: Assemble the Packets
Cut four 12×12-inch sheets of heavy-duty aluminum foil. Divide the potato mixture evenly among them, placing about one-quarter in the center of each sheet. Fold the foil up and seal tightly to create a fully enclosed packet that traps the steam inside.

Step 4: Cook
Arrange the packets seam-side up in the slow cooker. Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours. The potatoes are ready when they are fork-tender through the foil.

Step 5: Serve
Carefully remove the packets from the slow cooker. Open them away from your face to avoid escaping steam. Serve the potatoes with their buttery juices in a bowl, or present the foil packets directly on plates for a fun, individual serving style.
