Instructions
1. Prepare the Oven and Pans
Preheat the oven to 350°F (175°C). Grease two standard 9×5-inch loaf pans with butter or nonstick spray and set aside.
2. Mix the Wet Ingredients
In a large bowl, whisk together the granulated sugar, brown sugar, eggs, canola oil, and vanilla extract until the mixture becomes smooth and slightly fluffy.
3. Combine the Dry Ingredients
In another bowl, sift together the flour, baking soda, salt, cinnamon, and nutmeg to ensure everything is evenly blended and lump-free.
4. Make the Batter
Slowly add the dry ingredients to the wet mixture, stirring gently with a spatula or spoon until just incorporated. Avoid overmixing to keep the bread tender.
5. Add the Fruits and Vegetables
Fold in the shredded zucchini and diced apple until they are evenly distributed throughout the batter.
