My mom used to make these all the time, and I haven’t been able to find them anywhere—so I’m thrilled to have finally found this recipe!

These potato wedges are roasted to golden, crispy perfection and coated in a savory mix of Parmesan, garlic, and Provencal herbs—an irresistible side or snack.
Ingredients:
- 400g potatoes
- 50g grated Parmesan
- 1 tbsp garlic powder
- 1 tbsp olive oil
- 2 tsp Provencal herbs
- Salt, to taste
- Pepper, to taste
How to Make Baked Garlic Parmesan Potato Wedges:
Step 1: Prep the Potatoes
Wash your potatoes thoroughly to remove any dirt, leaving the skin on for extra texture and flavor. Cut each potato into 6 lengthwise wedges.
Step 2: Season
In a large mixing bowl, combine the potato wedges with Parmesan, garlic powder, olive oil, Provencal herbs, salt, and pepper. Toss well so each wedge is evenly coated.
Step 3: Prepare for Baking
Line a baking sheet with parchment paper to prevent sticking. Arrange the seasoned wedges in a single layer for even cooking.
Step 4: Roast
Preheat oven to 180°C (350°F). Roast the wedges for about 50 minutes, or until golden brown and crispy on the outside while tender inside.
Step 5: Serve
Remove the wedges from the oven and serve hot with ketchup or your favorite dipping sauce.
