Slow Cooker Chicken and Stuffing

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5–2 lbs / 700–900g)
  • 1 box stuffing mix (any flavor)
  • 1 can cream of chicken soup (10.5 oz / 300g)
  • ½ cup sour cream
  • ½ cup chicken broth
  • ½ cup melted butter

Optional seasonings:

  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • ¼ tsp salt (adjust to taste)
  • ½ tsp dried parsley

Instructions

  1. Lightly grease the slow cooker and place the chicken breasts in the bottom. Season as desired.
  2. In a bowl, mix the cream of chicken soup, sour cream, and chicken broth. Spread over the chicken.
  3. In another bowl, combine stuffing mix with melted butter, then sprinkle over the top.
  4. Cover and cook on LOW for 4–6 hours or HIGH for 2.5–3.5 hours, until chicken is tender.
  5. Serve as is, or shred the chicken and mix gently with the stuffing before serving.
