Ingredients
For the filling:
- 1 lb ground beef or turkey
- 1 (12 oz) package egg roll wrappers
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1 (4 oz) can diced green chiles (optional)
- 1 packet taco seasoning
- ½ cup water
- 1 small onion, diced
- 2 cloves garlic, minced
For assembly and cooking:
- 1 large egg, beaten
- Oil for frying (as needed)
- Salt and pepper to taste
How to Make Nacho-Style Egg Rolls
Step 1: Cook the meat
In a large skillet, cook the ground beef and diced onion over medium heat for about 6–8 minutes until browned. Drain any excess grease. Add the garlic and cook for 1 minute. Stir in the taco seasoning and water, then simmer for 2–3 minutes until slightly thickened.
Step 2: Mix the filling
Remove the skillet from heat and stir in the black beans, corn, green chiles (if using), and shredded cheese.
Tip: Let the filling cool for about 10 minutes before assembling. Hot filling can soften and tear the egg roll wrappers.
Step 3: Assemble the egg rolls
Place an egg roll wrapper on a flat surface in a diamond shape. Add 2–3 tablespoons of filling to the center. Fold the bottom corner over the filling, tuck in the sides, then roll upward. Brush the top edge with beaten egg to seal.
Step 4: Cook the egg rolls
To fry:
Heat oil to 350°F (175°C). Fry the egg rolls in batches for 3–4 minutes, until golden brown and crispy.
To bake:
Preheat oven to 425°F (220°C). Lightly brush the rolls with oil and bake for 15–18 minutes, flipping halfway through.
