Biscuit-Topped Chicken Pot Pie

Some recipes don’t just satisfy hunger—they come to the rescue. This one pulled me through a chaotic Tuesday (because it’s always Tuesday, right?). The cat knocked over my coffee, my kid suddenly needed 30 cupcakes by morning, and by dinner I was completely done.

Then I noticed what I had left: some roast chicken, a bag of frozen vegetables, and cream that needed to be used ASAP. A pot pie sounded amazing—but making a full crust? No way. That’s when I remembered the biscuit mix tucked away in the pantry. Problem solved—instant comfort food.


Biscuit-Topped Chicken Pot Pie

Ingredients

For the filling:

  • 3 tbsp butter
  • 2 leeks (white and light green parts), sliced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp sherry
  • 3 cups cooked chicken, diced
  • 1 cup frozen peas
  • 2 tsp fresh thyme leaves
  • Salt and pepper, to taste

For the biscuit topping:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 6 tbsp cold butter, cubed
  • 3/4 cup milk

Instructions

  1. Preheat your oven to 425°F (220°C).

Prepare the filling:
2. Melt butter in a large skillet over medium heat.
3. Add leeks, carrots, and celery, cooking until softened (about 5 minutes).
4. Stir in the flour and cook for another minute.
5. Slowly pour in the broth and cream, stirring continuously.
6. Mix in the sherry, chicken, peas, and thyme. Let simmer for about 5 minutes.
7. Season with salt and pepper to taste.

Make the biscuits:
8. In a bowl, combine flour, baking powder, and salt.
9. Cut in the butter until the mixture looks like coarse crumbs.
10. Stir in the milk just until the dough comes together.

Assemble and bake:
11. Transfer the filling to a 9×13-inch baking dish.
12. Spoon portions of biscuit dough over the top.
13. Bake for 20–25 minutes, until the biscuits are golden and the filling is bubbling.
14. Let it sit for about 5 minutes before serving.
