Bologna Cheese Bites

This simple snack brings back memories of easy afternoons and quick bites made with whatever was on hand. With just three ingredients, these bologna cheese bites turn into crispy, melty little cups that are hard to resist. As they bake, the edges curl and crisp while the cheese melts into a rich, bubbly center—perfect for a fast, satisfying treat.
Serve them hot right from the tray while the cheese is still gooey. They’re great on their own or paired with crunchy veggies like celery, peppers, or cucumbers. Add a little mustard on the side for extra flavor, or serve them alongside pickles or a light salad for a simple spread.
Bologna Cheese Bites
Ingredients
- 8 slices bologna (regular or thick-cut)
- 4 oz cheddar cheese, cut into 8 cubes
- 1 teaspoon oil or butter (for greasing)
Instructions
1. Preheat the oven
Set oven to 400°F (200°C). Line a baking sheet with foil and lightly grease it.
2. Arrange the bologna
Place the slices flat on the baking sheet, leaving space between each one.
3. Add the cheese
Put one cube of cheddar in the center of each slice and press lightly.
4. Bake
Bake for 8–12 minutes, until the edges curl and crisp and the cheese is melted and bubbly.
5. Cool slightly and serve
Let them rest for a couple of minutes, then carefully remove and serve warm.
