Broccoli Cauliflower Cheese Soup
Ingredients:
- 3 tablespoons butter
- 1 small yellow onion, diced
- 4 garlic cloves, minced
- 1/4 cup all-purpose flour
- 2 1/2 cups chicken or vegetable stock
- 2 cups half and half (room temperature)
- 2 cups broccoli florets, chopped
- 2 cups cauliflower florets, chopped
- 1 large carrot, shredded
- 1/2 teaspoon Dijon mustard
- 2 cups grated cheddar cheese
- Salt, to taste
- Black pepper, to taste
Instructions:
Step 1: Cook the base
Melt the butter in a large pot over medium heat. Add the onion and garlic, cooking until soft and fragrant.
Step 2: Make the thickener
Stir in the flour and cook for about 1–2 minutes, mixing constantly to form a smooth base.
Step 3: Add the broth

Return the soup to low heat and stir in the half and half, warming gently without boiling.

Add the Dijon mustard and cheddar cheese, stirring until melted and smooth. Season with salt and pepper to taste.
