Buttered Cabbage and Noodles

This buttered cabbage and noodles dish is the kind of hard-times supper Midwestern grandmothers relied on: inexpensive, filling, and far more comforting than its short list of ingredients suggests. Versions of this meal appear across Eastern and Central Europe—like Hungarian káposztás tészta or Polish haluski—but this simple skillet version is the one many of us grew up with.

Tender cabbage, soft noodles, and plenty of butter come together in one pan, bringing that “Nana made it” feeling to a weeknight meal with almost no effort.

Serve it straight from the skillet with a pepper grinder nearby and maybe a splash of hot sauce. It’s satisfying on its own, but you can round it out with sliced tomatoes, cucumber salad, or even a fried egg on top. If you want extra protein, pair it with kielbasa, roast chicken, or pan-fried pork chops. Leftovers reheat beautifully with a splash of water or a little butter, making this a great make-ahead side for roasted vegetables or a simple salad the next day.

Directions

  1. Cook the noodles: Bring a pot of salted water to a boil. Cook the noodles until just tender. Reserve ¼ cup of the pasta water, then drain.
  2. Prepare the vegetables: Core and thinly slice the cabbage, and thinly slice the onion.
  3. Start the skillet: In a large skillet or Dutch oven, melt 3 tablespoons of butter with the oil over medium heat. Add the onion and cook until soft and translucent, about 5–7 minutes.
  4. Cook the cabbage: Add the cabbage, salt, and pepper. Stir to coat. Cook over medium to medium-low heat, stirring occasionally, until the cabbage is tender and lightly caramelized, about 15–20 minutes. Add small splashes of water if the pan looks dry.
  5. Season: Stir in the garlic powder and paprika if using. Adjust salt and pepper to taste.
  6. Combine: Add the drained noodles and the remaining 3 tablespoons of butter to the skillet. Toss until the noodles are coated and the cabbage is evenly distributed, about 2–3 minutes. Add a little reserved pasta water if the mixture seems dry.
  7. Finish: Taste and adjust seasoning. Garnish with parsley or chives if desired.
  8. Serve: Place the skillet in the center of the table and let everyone scoop their portion while it’s hot.
