Instructions

Step 1: Prepare the Oven

Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with aluminum foil and lightly coat it with cooking spray or oil.

Step 2: Cook the Chorizo

Place the chorizo in a skillet over medium heat. Break it apart as it cooks and continue until fully browned, about 6–8 minutes. Drain away most of the excess grease, leaving just a small amount for flavor. Allow the sausage to cool for about 5 minutes.

Step 3: Combine Ingredients

Transfer the cooked chorizo to a mixing bowl. Add the mozzarella and Parmesan cheeses and stir until the mixture is evenly combined and slightly sticky.

Step 4: Form the Bites

Using approximately one tablespoon of the mixture per portion, place small mounds onto the prepared baking sheet. Leave about 1 inch of space between each mound and gently press them together so they hold their shape during baking.

Step 5: Bake

Bake for 10–14 minutes, or until the cheese is bubbling and the edges become golden brown. Watch closely after the 10-minute mark and continue baking if needed for additional color.

Step 6: Cool and Serve

Remove the baking sheet from the oven and allow the bites to rest for 5–7 minutes. This helps them firm up slightly. Carefully lift them with a spatula and serve warm.

Recipe Note

These cheesy chorizo bites prove that a short ingredient list can still produce incredible flavor. Crispy, savory, and packed with bold seasoning, they’re a perfect low-carb snack or appetizer for any occasion.
