Some meals have a way of bringing people together, turning an ordinary dinner into a memorable evening. Easy Italian Drunken Noodles is one of those recipes. It’s hearty, full of flavor, and simple enough to prepare after a busy day. As it cooks, the aroma of garlic, herbs, and savory sauce fills the kitchen, making it hard for anyone to stay away.

I first made this dish on a cool evening when I wanted something comforting without spending hours in the kitchen. With a handful of pantry ingredients, a splash of red wine, and a craving for a satisfying pasta dinner, the result exceeded every expectation. The noodles soaked up a rich tomato sauce, while the wine added depth and warmth to every bite.

Easy Italian Drunken Noodles

Ingredients (Serves 4)

  • 12 oz (340 g) wide egg noodles
  • 2 tbsp olive oil
  • 1 lb (450 g) Italian sausage, sliced or crumbled
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes (optional)
  • ½ tsp black pepper
  • ¾ tsp salt
  • 1 cup marinara or tomato basil sauce
  • ½ cup dry red wine (or chicken broth)
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped fresh basil or parsley

Instructions

1. Cook the Noodles
Bring a large pot of salted water to a boil. Cook the noodles according to package directions until tender. Drain and set aside.

2. Brown the Sausage
Heat olive oil in a large skillet over medium-high heat. Add the sausage and cook until browned. Remove from the skillet and set aside.

3. Sauté the Vegetables
Add the onion and bell peppers to the same skillet. Cook for 4–5 minutes, stirring occasionally, until softened.

4. Add Garlic and Seasonings
Stir in the garlic, Italian seasoning, red pepper flakes, salt, and black pepper. Cook for about 30 seconds, just until fragrant.

5. Deglaze the Pan
Pour in the red wine or chicken broth, scraping up any flavorful bits from the bottom of the skillet. Let it simmer for 2–3 minutes.

6. Create the Sauce
Add the marinara sauce and return the sausage to the skillet. Stir well and simmer for another 3–4 minutes.

7. Combine with Noodles
Add the cooked noodles and toss gently until everything is evenly coated in the sauce.

8. Finish and Serve
Remove from heat and top with Parmesan cheese and fresh herbs. Serve immediately.
