Easy Southern Smothered Chicken Thighs

This recipe is the perfect weeknight comfort meal: juicy chicken thighs baked in a rich, creamy sauce that comes together with almost no effort. Instead of standing over the stove making gravy, you simply mix one smooth blend—cream of chicken soup, milk, and a few everyday spices—then pour it over the chicken. While it bakes, the sauce thickens and coats the meat, creating that familiar “smothered” Southern-style flavor.
It’s simple, affordable, and ideal for busy days—just place it in the oven and let the savory aroma fill the kitchen while it cooks.
Serve these smothered chicken thighs over soft white rice, buttered egg noodles, or creamy mashed potatoes so none of the sauce goes to waste. Add sides like green beans, steamed broccoli, or a fresh salad for balance. For a classic Southern-style table, include skillet cornbread or warm dinner rolls to soak up the gravy, along with coleslaw or roasted carrots for color and texture.

| Cream of chicken soup | 1 (10.5 oz) can | Base of the sauce |

| Black pepper, freshly ground | ½ tsp + more to taste | Seasoning |
| Olive oil or neutral oil | 1 tbsp | For coating chicken |
| Paprika (optional) | ½ tsp | For color |
| Fresh parsley, chopped | For garnish | Optional |
Directions
1. Preheat the oven
Set the oven to 375°F (190°C) and lightly grease a 9×13-inch glass baking dish.
2. Season the chicken
Pat the chicken thighs dry with paper towels. Rub them lightly with oil and season with salt, pepper, and paprika if using. Arrange them skin-side up in the baking dish.
3. Prepare the sauce
In a bowl, whisk together the cream of chicken soup, milk, onion powder, garlic powder, ½ tsp salt, and ½ tsp pepper until smooth and well blended.
4. Cover the chicken
Pour the sauce evenly over the thighs so each piece is coated and the spaces between them are filled.
5. Bake covered
Cover the dish tightly with foil and bake for 30 minutes.
6. Finish baking uncovered
Remove the foil and continue baking for 20–30 minutes, until the chicken reaches 165°F (74°C) and the sauce is bubbling and thick.
7. Optional broil
For a lightly golden top, place the dish under the broiler for 2–3 minutes, watching carefully so it doesn’t burn.
8. Rest and serve
Allow the dish to rest for 5–10 minutes before serving. Taste the sauce and adjust seasoning if needed. Sprinkle with fresh parsley and serve hot, spooning plenty of the creamy sauce over each portion.
