Make the dough
In a large bowl, combine flour, baking powder, and salt. Slowly add warm water and 4 tbsp oil, mixing until a dough forms. Knead for 8–10 minutes until smooth, then cover and let rest for 30 minutes.
Prepare for frying
Line a plate with paper towels. Mix sugar and cinnamon in a separate bowl. Heat oil in a pan to about 350°F (175°C).
Shape and cook
Divide dough into 8 portions. Roll each into a ball, then flatten into thin circles. Fry for about 60 seconds per side until golden and crisp.
Finish
Drain on paper towels and coat immediately in cinnamon sugar.
