| Pancake mix | 2 cups |
| Milk | 1½ cups |
| Large eggs | 2 |
| Vanilla extract | 1 teaspoon |
| Cinnamon (optional) | 1 teaspoon |
For the Topping

| Maple syrup | ½ cup |
| Butter, melted | ¼ cup |
Instructions
Step 1: Preheat the Oven
Preheat the oven to 350°F (175°C).
Step 2: Cook the Sausage
Place the breakfast sausage in a skillet over medium heat. Cook, breaking it into crumbles, until fully browned and no longer pink. Drain any excess grease and set aside.
Step 3: Prepare the Batter
In a large mixing bowl, whisk together the pancake mix, milk, eggs, vanilla extract, and cinnamon, if using. Mix until just combined; a few small lumps in the batter are perfectly fine.
Step 4: Prepare the Baking Dish
Lightly grease a 9×13-inch baking dish with butter or nonstick cooking spray.
Step 5: Assemble the Casserole
Pour half of the pancake batter into the prepared baking dish and spread it evenly.
Sprinkle the cooked sausage evenly over the batter.
Top with the remaining pancake batter, spreading gently to cover the sausage layer.
Step 6: Add the Topping
Drizzle the maple syrup evenly across the top of the casserole. Pour the melted butter over the surface.
Step 7: Bake
Bake for 30 to 35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Step 8: Cool and Serve
Allow the casserole to cool for several minutes before slicing.
Serve warm with extra maple syrup if desired.
