Pastrami Cheese Bites

These bite-sized snacks have a way of disappearing fast—set them out, and suddenly everyone’s grabbing one (or three). A neighbor first brought them to a game night years ago, and they’ve been a go-to ever since. Savory pastrami wraps around a creamy cheese filling, warmed just enough to soften and blend into a rich, melt-in-your-mouth bite. With only three ingredients and minimal prep, they’re perfect for busy days or last-minute gatherings.

Serve them warm or at room temperature with toothpicks for easy snacking. Fresh veggies like celery, cucumber, or bell peppers add a nice crunch, while mustard or pickles bring a tangy contrast. They also pair well with simple extras like olives, nuts, or a light salad.

Low Carb 3-Ingredient Pastrami Cheese Bites

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup shredded Swiss cheese (or another mild melting cheese)
  • 1/2 lb thinly sliced pastrami

Directions

  1. Line a plate or baking sheet with parchment paper.
  2. In a bowl, mix cream cheese and shredded Swiss until smooth.
  3. Lay out pastrami slices and cut into smaller pieces if needed.
  4. Add 1–2 teaspoons of cheese mixture onto each slice.
  5. Fold or roll the pastrami around the filling and place seam-side down.
  6. For a softer texture, warm in a 300°F (150°C) oven for 5–7 minutes until heated through.
  7. Let cool slightly, then serve.

Make ahead if needed—just refrigerate and bring to room temperature before serving.
