Scallop Bites

These low-carb scallop bites are the kind of appetizer that disappear as soon as they’re served. My father-in-law used to bring trays of them to spring gatherings, and there was always a small crowd waiting nearby for the first batch. Tender, sweet scallops wrapped in crisp, salty bacon turn perfectly soft inside, with lightly golden edges that make them feel extra indulgent. With just two ingredients and a single sheet pan, they’re simple enough for a weeknight yet special enough for holidays, potlucks, or any occasion that calls for an easy, impressive appetizer.


Serve them hot straight from the oven on a simple platter so their golden, crispy bacon and juicy centers stand out. They pair well with lemon wedges, a side of sugar-free garlic aioli, or a fresh mixed greens salad. For a larger spread, add deviled eggs, cheese, and vegetables. As part of a sit-down meal, they make a great starter before dishes like grilled steak, roasted chicken, or asparagus.


Scallop Bites

Ingredients

  • 1½ lb large sea scallops (about 20–24), patted dry
  • 12 slices thin-cut bacon, halved crosswise

Directions

1. Preheat the oven
Set oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or foil. If available, place a wire rack on top.

2. Prepare the scallops
Pat the scallops very dry with paper towels to prevent them from steaming.

3. Wrap with bacon
Cut each bacon slice in half. Wrap each scallop with a half-slice and secure with a toothpick. Arrange on the prepared pan, leaving space between each piece.

4. Bake
Bake for 15–20 minutes, until the bacon is crisp and golden and the scallops are opaque. For extra browning, move the pan to the top rack for the last 2–3 minutes.

5. Check for doneness
Scallops should be tender and just firm, not rubbery.

6. Rest and serve
Let rest for 2–3 minutes, then transfer to a serving platter. Serve hot, reminding guests to remove toothpicks before eating.
