Perfect for busy evenings, this easy casserole comes together with simple ingredients and makes fantastic leftovers for lunch or dinner the next day.

Ingredients

  • 1 pound ground beef or ground turkey
  • 2 tablespoons dried minced onion
  • 1 can Manwich sauce
  • 3 cups beef broth
  • 1 can diced tomatoes, undrained
  • 1 pound dry pasta
  • 8 ounces Velveeta cheese, cut into cubes
  • 1 cup corn
  • 1½ cups shredded cheddar cheese

Instructions

Step 1: Prepare the Meat

Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray.

In a large skillet over medium heat, cook the ground meat with the dried minced onion until browned and fully cooked. Drain excess grease if necessary.

Step 2: Cook the Pasta Mixture

Add the Manwich sauce, beef broth, and diced tomatoes to the skillet. Bring the mixture to a gentle boil.

Stir in the dry pasta and cook until the pasta is tender and most of the liquid has been absorbed.

Step 3: Make It Creamy

Lower the heat and stir in the corn and Velveeta cheese. Continue stirring until the cheese melts completely and creates a smooth, creamy sauce.

Step 4: Bake

Transfer the mixture to the prepared baking dish and spread evenly. Sprinkle the shredded cheddar cheese across the top.

Cover the dish and bake for 15 to 20 minutes, or until the cheese is melted and the casserole is hot and bubbly.

Step 5: Serve

Allow the casserole to rest for a few minutes before serving. Enjoy it warm as a comforting family meal, and refrigerate any leftovers for an easy meal later.

A simple, cheesy, and filling dinner that’s ideal for weeknights and guaranteed to become a regular favorite.
