These old-fashioned hoecakes came from the kind of cooking that made something special out of almost nothing. Ingredients

• 1 cup yellow cornmeal
• 1 cup milk or water
• 1 large egg
• 3 tbsp bacon grease or vegetable oil, plus more for frying

Instructions

Place a cast-iron skillet over medium heat and add enough grease or oil to coat the bottom well.

2️⃣ Make the Batter
In a bowl, whisk together cornmeal, egg, and milk or water until smooth and pourable. Add a pinch of salt if needed.

Drop in a little batter. If it sizzles immediately, you’re ready to cook.

4️⃣ Fry the Hoecakes
